De marzemino is een typische Italiaanse druif die in Veneto en Alto-Adige voorkomt. Oorspronkelijk uit Karinthië. De naam werd gebruikt door Mozart in de opera Don Giovanni, waar deze om Marzemino roept voor hij de hel in gestuurd wordt.
Alle druiven worden met de hand geplukt. Alleen de beste druiven mogen worden gebruikt. Fermentatie gebeurt in temperatuur gecontroleerde tanks. In zo’n 8 dagen wordt de maceratie en fermentatie gedaan, waarbij men 5 keer per dag de wijn over de schillen pompt. Daarna rijpt de wijn 12 maanden in hele grote, gebruikte Franse eiken vaten.
