This wine is from the Lieu dit "Les Chaillots" and is a composition of 50% Gamay and 50% Pinot Noir. The vines have an average age of 30 years. 70% is destemmed . Before fermentation there is period of 4 or 5 days of cold soaking of the skins (at 5 degrees Celcius)
The fermentation is 10 till 12 days at 28 dergrees to keep the fresh fruit. After that the wine ages for 6 months in 228 liter old vats and another 6 months in tanks.
Despite it's fruity character it's a serious wine that can age uptill 8 yaers.
serve sligthly chilled.
Nice on it's own but also with white meats, charcuterie, and BBQ
