Terroir : blend of 3 different plots made of limestone and clay.
Exposure: South and South-East oriented – altitude between 180 and 250 m
Planting density : 7000 to 8000 vinestocks / hectare
Grape variety : 100% Chardonnay
Vineyard : 25 years for the youngest and 45 for the oldest
Harvesting : 100% hand-picked since 2010
Wine-making :
100% Organic (certification on progress). Grounds are ploughed under the vine
stock. A natural cover planting is hold in every rows. In order to encourage the
development of life in our grounds, we only use mineral essences sometimes
associated with herbs and plants preparation.
Vinification : Slow pressing. Cold fermentation with only native yeast.
Aged in steel tank during 18 months, on average, depending of the maturity of the
wine.
Light filtration just before the bottling (generally beginning of September, in
november for this vintage, 2 years after the harvest).
