Fattoria di Petrognano

Located nearby Florence, the Estate extends for 85 hectares (olive, grain, wood, scrub).On the south side of the Pizzorne Mountains (1000 meters high), Fattoria di Petrognano dominates the plain of Lucca and Capannori, with the mountains of Pisa in the background.
The heart of the estate, and the small village of Petrognano, is 350 meters above sea level, where the cultural landscape of olive groves and vineyards slowly changes into chestnut, oak and cluster pine forests.
Here they produce organic red and white wine and olive oil.
Vineyards are 25 hectares, height is 250/300 meters, terroir is mainly clay and limestone.
Conduction is organic through a precision-farming system able to monitor the plants and soil.
Agriculture 4.0 protocol is also used to optimize the growing process in a sustainable manner.
Wines
Wines are organic certified, four red (Chianti, Riserva, blend, Sangiovese) two white (Trebbiano).
Chianti is named Superiore and its production specifications are stricter than traditional Chianti.
Any vigna has its own wine-making, maceration is short on the lees, wood ageing is non-invasive.
Orci wine-making is made by both small amphora vats (200 liters) and floating-in-the-air pallò.

Pallò, suspended from the ground at an accessible height, distinguishes itself for the thickness of the terracotta that is uniform throughout its surface, without embellishments of edges or designs that vary the ratio of the wine with the outside. Clean, essential and professional, it acquires virtue, competence and uniqueness thanks to its precise, logical and regular base that allows one to rotate it for 360°, optimising the racking, cleaning and practices of ageing, in addition to excluding the presence of steel for total discharge, the wine tap and the lid. Moreover, the double lid in terracotta with the air chamber and without boiler creates an optimal vacuum with parameters of ageing more realistic than other experiences.
